Creamy Tuscan Shrimp


  • 1 lb raw shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste


  1. In a large skillet, melt the butter over medium-high heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.
  2. Add the raw shrimp to the skillet and cook for 2-3 minutes on each side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
  3. Add the sun-dried tomatoes and chicken broth to the skillet. Bring the mixture to a simmer and cook for 3-4 minutes, until the liquid has reduced by half.
  4. Add the heavy cream and grated Parmesan cheese to the skillet. Stir everything together to combine.
  5. Add the fresh spinach to the skillet and cook for 1-2 minutes, until wilted.
  6. Return the cooked shrimp to the skillet and stir everything together to combine. Season with salt and pepper to taste.
  7. Serve the creamy Tuscan shrimp hot, garnished with extra Parmesan cheese and fresh herbs if desired.
