For the crust:

  • 2 cups almond flour
  • 1/2 teaspoon salt
  • 1/4 cup melted butter
  • 1 large egg

For the filling:

  • 1 lb ground meat (beef, chicken, turkey, etc.)
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/4 cup beef or chicken broth
  • 1 tablespoon olive oil

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a mixing bowl, combine almond flour and salt.
    • Add the melted butter and egg to the almond flour mixture. Mix well until a dough forms.
    • Press the dough into a ball and wrap it in plastic wrap. Chill in the refrigerator for about 15-20 minutes.
  2. Prepare the Filling:
    • In a skillet, heat the olive oil over medium heat.
    • Add chopped onions and bell peppers. Sauté until they are softened and slightly caramelized.
    • Add the minced garlic, dried thyme, and dried rosemary. Cook for another minute until fragrant.
    • Push the vegetables to the side of the skillet and add the ground meat. Cook until the meat is browned and cooked through. Break up the meat into smaller pieces as it cooks.
    • Season the meat and vegetable mixture with salt and pepper to taste.
    • Pour in the broth and let it simmer for a few minutes until the mixture is well combined and slightly thickened.
  3. Assemble the Pies:
    • Divide the chilled dough into 4 equal portions.
    • Place a portion of dough between two sheets of parchment paper and roll it out to form a circle that’s about 1/4 inch thick.
    • Place a generous scoop of the meat filling on one half of the dough circle, leaving a border around the edges.
    • Fold the other half of the dough over the filling, creating a half-moon shape. Press the edges together to seal the pie.
    • You can use a fork to crimp the edges for a decorative touch.
  4. Bake:
    • Place the assembled pies on a baking sheet lined with parchment paper.
    • Bake in the preheated oven for about 20-25 minutes, or until the crust is golden brown.
  5. Serve:
    • Let the pies cool slightly before serving.
