Loaded Blackened Chicken


1.5 pounds boneless chicken breast (about 3)

1 teaspoon blackening spice

1 large onion, sliced

6 slices of bacon

1/2 teaspoon of salt

1/4 teaspoon black pepper

4 ounces black pepper, minced

chopped fresh parsley


Season the chicken breast with blackening seasoning. Set it aside.

Cook the bacon in a pan until crispy. Remove to a paper towel lined plate.

Drain all but about 1 1/2 tablespoons of the bacon grease from the pan, making sure there is enough to cover the bottom of the pan. Reserve the rest.

Add chopped onion, salt and pepper. Saute the onion over medium heat for about 10 minutes or until translucent. Take it out in a bowl.

Add a little more bacon grease or 1 teaspoon olive oil to re-coat the bottom of the pan. Add seasoned chicken breasts and cook over medium heat for 8 to 9 minutes per side or until fully cooked through.

Stuff each chicken breast with onions and bacon. Fill with grated cheese.

Place under broiler for 2 minutes or until cheese melts. (If you are not using an oven-proof pan, transfer the chicken breasts to a pan before placing them under the broilers).

Add fresh parsley on it. Serve hot.????
